Warm Quinoa Salad with Turkey, Green Beans, Sunflower Seeds & Feta recipe


This is a warm salad with quinoa, turkey, green beans, and feta cheese. It's mixed with sunflower seeds and a lemony dressing. It's yummy and good for lunch or dinner. You cook the quinoa and turkey together, then mix with the other things.


1 cup quinoa
1 lb turkey breast, boneless skinless
3 cups green beans, trimmed and halved
1/3 cup sunflower seeds
1 x 6 oz block feta cheese
1 small bunch cilantro
1 lime
1/2 cup cherry tomatoes, halved
1 large shallot
1/4 tsp black pepper
2 tbsp olive oil
1/2 tsp salt


Rinse 1 cup of quinoa under cold water using a strainer, then drain and transfer to a medium saucepan.
Add 2 cups of water, 1 lb of turkey breast, 1/2 tsp of salt, and 1/4 tsp of black pepper to the saucepan with quinoa. Bring to a boil over high heat.
Once boiling, cover the saucepan and reduce heat to low. Cook until the quinoa is fluffy and the turkey is cooked through, about 20 minutes.
While the quinoa and turkey are cooking, wash and dry the green beans, cilantro, and cherry tomatoes.
Zest and juice the lime into a large bowl. Add 2 tbsp of olive oil, a pinch of salt, and pepper. Whisk to make the dressing.
Trim and halve the green beans, then add them to the bowl with the dressing.
Chop the cilantro leaves finely and add to the dressing bowl.
Peel and thinly slice the shallot, then add to the bowl with the dressing.
Halve the cherry tomatoes and add them to the bowl along with the sunflower seeds.
Once the quinoa and turkey are done, remove from heat and let them stand for 5 minutes, still covered.
Transfer the turkey to a cutting board and shred it using two forks.
Fluff the quinoa with a fork and add it to the bowl with the dressing and vegetables.
Add the shredded turkey to the bowl and toss everything to combine.
Crumble the feta cheese over the salad and serve warm.
