Veggie Sausage and Walnut Rolls recipe

These are yummy rolls with veggie sausage inside. They are wrapped in a flaky crust. You can eat them for a snack or a meal. They are not made from animals and are good for the planet.

Ingredients

400 g Plant-Based Mince
1 Large Onion
1 Sheet of Vegan Puff Pastry
1 Handful of Thyme
100 g Walnuts
50 g Dried Cranberries
1 Tbsp Sesame Seeds
1/2 Tsp Allspice
60 ml Soy Milk
2 Tbsp Olive Oil

Method

Preheat your oven to 200°C (392°F).

Chop the onion finely and sauté in a pan with olive oil over medium heat for about 3 minutes until soft.

Roughly chop the walnuts and thyme, then add them to the pan with the dried cranberries. Cook for another 3 minutes.

Season the mixture with allspice and a pinch of salt. Transfer to a large bowl.

Crumble the plant-based mince into the bowl with the onion mixture. Combine well.

Cut the puff pastry sheet in half lengthwise. Place half of the sausage mixture along the center of each pastry strip.

Brush the edges of the pastry with soy milk. Fold the pastry over the filling and press the edges to seal with a fork.

Brush the tops of the rolls with soy milk and sprinkle with sesame seeds.

Cut each long roll into 4 pieces, making 8 rolls in total. Place them on a baking tray lined with parchment paper.

Bake in the preheated oven for 30 minutes or until the pastry is golden brown and puffed. Let them cool slightly before serving.
