This is a yummy burger made with beans and cheese. It has a spicy sauce and is cooked in a pan. You put it on a bun with lettuce, tomato, and onion.

Ingredients

1/2 cup mayonnaise
1 Tbsp. adobo sauce from a can of chipotle chiles in adobo
1 Tbsp. olive oil
1 medium yellow onion, finely chopped
1 1/2 tsp. kosher salt, divided, plus more to taste
3 garlic cloves, minced
1 tsp. smoked paprika
1/2 tsp. chili powder
1 x 8 oz. block cheddar cheese, shredded
1 x (15 oz.) can black beans, drained and rinsed
1 large egg, beaten
1/2 cup panko breadcrumbs
4 whole wheat buns, split
Unsalted butter, for buns
Shredded lettuce, sliced red onion, and sliced tomato (for serving)

Method

In a small bowl, mix 1/2 cup mayonnaise with 1 Tbsp. adobo sauce to make the spicy mayo. Set aside in the fridge.

Heat 1 Tbsp. olive oil in a skillet over medium heat. Add the yellow onion with 1/2 tsp. salt and cook until soft, about 5 minutes. Add minced garlic, smoked paprika, and chili powder, and cook for another 2 minutes. Remove from heat and let cool.

In a large bowl, mash the black beans. Mix in the shredded cheddar cheese, beaten egg, panko breadcrumbs, and 1 tsp. salt. Add the cooled onion mixture and combine well.

Form the mixture into 4 equal-sized patties.

Butter the inside of the whole wheat buns and toast them in a skillet until golden brown. Set aside.

In the same skillet over medium-high heat, cook the patties for about 3 minutes on each side or until they are well browned and heated through.

Assemble the burgers by spreading the spicy mayo on the buns, then add lettuce, a bean patty, sliced red onion, and tomato. Serve immediately.
