Vegan Sausage with Garlic Mashed Potatoes and Onion Gravy recipe


This is a warm, hearty meal with vegan sausages, creamy garlic mashed potatoes, and a rich onion gravy. It's perfect for a cozy dinner and is super yummy. You'll love the flavors and how it fills you up!


12 Vegan Sausages
2 Large Yellow Onions
1 Tbsp All-Purpose Flour
450 ml Vegetable Broth
1 Tbsp Balsamic Vinegar
1/4 cup Chopped Fresh Thyme
8 Medium Potatoes, peeled
4 Cloves Garlic, minced
2 Tbsp Vegan Butter
1 Tbsp Olive Oil
Salt to taste
Black Pepper to taste


Start by peeling and quartering the potatoes. Place them in a large pot, cover with water, and bring to a boil. Cook until they are tender, about 20 minutes.
While the potatoes are boiling, heat 1 Tbsp of olive oil in a frying pan over medium heat. Add the vegan sausages and cook until browned on all sides, about 10 minutes. Remove the sausages and set aside.
In the same pan, add the sliced yellow onions and cook until they start to soften and turn golden, about 5 minutes.
Sprinkle the flour over the onions and stir until they are well coated. Slowly pour in the vegetable broth and balsamic vinegar, stirring constantly to create a smooth gravy. Bring to a simmer and let it thicken for about 5 minutes.
Return the sausages to the pan with the gravy, add the chopped thyme, and season with salt and pepper. Simmer for another 5 minutes to heat the sausages through and infuse the flavors.
Once the potatoes are cooked, drain them and return to the pot. Add the minced garlic and vegan butter, then mash until smooth and creamy. Season with salt and pepper to taste.
To serve, place a generous scoop of garlic mashed potatoes on each plate, top with three vegan sausages, and spoon over the onion gravy. Enjoy your delicious vegan meal!
