Vegan Meatballs recipe

Stashcook

These are yummy balls made from plants, not animals! They are brown and crispy on the outside. You can eat them with pasta, or just by themselves with a tasty sauce.

Ingredients

350 g extra firm tofu
1 medium onion, finely chopped
2 tablespoons soy sauce
2 tablespoons almond butter
3/4 cup panko breadcrumbs
1/4 cup rice flour
2 tablespoons olive oil for frying
1 teaspoon garlic powder
1 teaspoon smoked paprika

Method

1
Drain and press the tofu to remove excess water. Crumble it into a large mixing bowl.
2
Add the finely chopped onion, soy sauce, almond butter, panko breadcrumbs, garlic powder, and smoked paprika to the bowl with the crumbled tofu. Mix well until the ingredients are evenly distributed.
3
Shape the mixture into balls, about the size of a walnut.
4
Roll each ball in rice flour to coat lightly.
5
Heat olive oil in a frying pan over medium heat. Add the tofu balls and fry for about 7-8 minutes, turning occasionally, until they are golden brown and crispy on the outside.
6
Remove the vegan meatballs from the pan and place them on a paper towel to drain any excess oil.
7
Serve the vegan meatballs hot with your choice of sauce or as part of a main dish.
