This is a grilled sandwich with turkey, spinach, and feta cheese. It's served with a fresh salad made of mixed greens and cucumber. It's a yummy meal that's easy to make. You cook the turkey and then put it in a sandwich with cheese and spinach. The salad is simple with just a few ingredients.

Ingredients

4 (6 oz) turkey breast cutlets
1 tsp dried basil
1/2 tsp garlic powder
4 oz feta cheese, crumbled
2 cups fresh spinach leaves
4 multigrain sandwich rolls
1 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
1/2 cucumber, thinly sliced
4 cups mixed salad greens
2 tbsp red wine vinegar

Method

Season the turkey cutlets with salt, pepper, garlic powder, and dried basil.

Heat a grill pan over medium-high heat and brush with olive oil.

Cook the turkey cutlets until they are cooked through and no longer pink in the center, about 3-4 minutes per side. Transfer to a plate.

Slice the rolls in half and distribute the feta cheese and spinach leaves on the bottom halves.

Add the cooked turkey cutlets on top of the spinach and close the sandwiches with the top halves of the rolls.

Place the sandwiches back on the grill pan and press down with a heavy object to flatten them slightly. Grill until the rolls are toasted and the cheese begins to melt, about 2 minutes per side.

In a large bowl, whisk together red wine vinegar, a pinch of salt, and pepper to create a simple dressing.

Add the mixed salad greens and cucumber slices to the bowl and toss to coat with the dressing.

Serve each grilled sandwich with a portion of the mixed greens salad on the side.
