Turkey Sloppy Joes with Apple Cabbage Slaw recipe

This is a yummy sandwich with ground turkey and a sweet slaw. The meat is cooked with sauce and put on a bun. The slaw is made with cabbage and apple. It's a fun meal for lunch or dinner.

Ingredients

1 lb ground turkey
1 large green bell pepper
1 large yellow onion
3 cloves garlic
1 x (15 oz) can tomato sauce
1 tbsp apple cider vinegar
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1/2 tsp smoked paprika
1/4 tsp ground mustard
1/4 tsp black pepper
1/2 tsp salt
1 tbsp olive oil
4 whole wheat buns
2 cups shredded cabbage
1 medium carrot
1 small apple
2 tbsp mayonnaise
1 tsp honey
1 tsp lemon juice
Salt and pepper to taste

Peel and finely chop the onion and garlic. Wash, seed, and dice the green bell pepper.

In a large skillet, heat olive oil over medium heat. Add the onion, green pepper, and garlic. Cook until softened, about 5 minutes.

Add the ground turkey to the skillet. Cook, breaking it apart with a spoon, until browned and no longer pink, about 5-7 minutes.

Stir in the tomato sauce, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, ground mustard, salt, and black pepper. Simmer until the sauce thickens, about 10 minutes.

While the meat is cooking, make the slaw. Shred the cabbage, grate the carrot, and thinly slice the apple. In a large bowl, mix mayonnaise, honey, and lemon juice. Add the cabbage, carrot, and apple to the bowl and toss to coat. Season with salt and pepper to taste.

Toast the whole wheat buns if desired.

To serve, spoon the turkey mixture onto the buns and top with the apple cabbage slaw.
