Turkey, Asparagus & Brown Rice Skillet recipe

This is a yummy dish with turkey, asparagus, and brown rice. You cook rice and then mix it with turkey, asparagus, and lemon. It's easy to make and very tasty!

Ingredients

1 lb turkey breast cutlets
2 cups brown rice
1 bunch asparagus, trimmed and cut into 1-inch pieces
1 lemon, zested and juiced
2 tablespoons olive oil
1/2 cup low-sodium chicken broth
1 teaspoon dried thyme
1/2 teaspoon garlic powder
Salt to taste
Black pepper to taste

Method

In a medium pot, combine 2 cups of brown rice with 4 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes or until the rice is tender.

While the rice is cooking, season the turkey cutlets with salt, pepper, thyme, and garlic powder.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the turkey cutlets and cook until browned on both sides and cooked through, about 3-4 minutes per side. Transfer to a plate and cover to keep warm.

In the same skillet, add the remaining tablespoon of olive oil and the asparagus pieces. Season with salt and pepper, and sauté until they are tender-crisp, about 4-5 minutes.

Pour in the chicken broth and lemon juice, and bring to a simmer. Let it cook for 2 minutes, then return the turkey cutlets to the skillet, and warm through.

Fluff the cooked brown rice with a fork and mix in the lemon zest.

Serve the turkey and asparagus over the lemon-zested brown rice. Enjoy your meal!
