1 large red onion, thinly sliced
4 oz mixed greens
4 whole wheat buns
2 tbsp balsamic vinegar
1/4 tsp black pepper
1 tbsp Dijon mustard
2 tbsp extra virgin olive oil, plus more for cooking
1 tsp honey
1/2 tsp Italian seasoning
1/4 cup panko bread crumbs
1/2 tsp dried sage
1/2 tsp salt, plus more for seasoning
1 tbsp balsamic glaze

Method

1
Heat a pan over medium heat. Add 1 tbsp olive oil and the sliced onions with a pinch of salt. Cook until caramelized, about 15 minutes.
2
In a bowl, mix the ground turkey, chopped cranberries, diced apple, panko bread crumbs, sage, Italian seasoning, salt, and pepper. Form into 4 patties.
3
Heat a grill pan or skillet over medium-high heat with a bit of olive oil. Cook the patties for 5 minutes on each side or until done.
4
Whisk together balsamic vinegar, 1 tbsp olive oil, honey, Dijon mustard, and a pinch of salt and pepper to make the dressing.
5
Toss the mixed greens in the dressing and set aside.
6
Once onions are caramelized, drizzle with balsamic glaze and stir to coat.
7
Toast the buns if desired.
8
Assemble the burgers by placing a patty on each bun bottom, top with caramelized onions, crumbled feta, and a handful of dressed greens. Cap with the bun tops.
9
Serve the burgers with any extra salad on the side.
