Turkey and Avocado Sandwich with Lemon-Dijon Dressing Salad recipe


This is a yummy sandwich with turkey, avocado, and a tangy lemon spread. It comes with a fresh salad that has a lemony dressing. It's easy to make for lunch or dinner!


1 ripe avocado
8 slices multigrain bread
16 oz smoked turkey breast, sliced
1 large tomato, sliced
4 lettuce leaves
1/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon honey
1/2 English cucumber, sliced
1/4 cup olive oil
1 tablespoon white wine vinegar
Salt and pepper to taste


In a small bowl, mix together mayonnaise, lemon juice, Dijon mustard, and honey to create the lemon-Dijon spread.
Wash and dry the lettuce leaves and tomato. Slice the tomato and avocado.
Spread the lemon-Dijon spread on one side of each bread slice.
Layer the smoked turkey, avocado slices, tomato slices, and lettuce on four of the bread slices. Top with the remaining bread slices to form sandwiches.
In a medium bowl, whisk together olive oil, white wine vinegar, salt, and pepper to make the dressing.
Add the sliced cucumber to the dressing and toss to coat.
Serve each sandwich with a side of the cucumber salad.
