Tropical Spinach Salad with Citrus-Honey Vinaigrette recipe

This is a yummy salad with fresh spinach, sweet mango, creamy avocado, and crunchy almonds. It has a special dressing made with orange juice and honey. It's a healthy and colorful dish that's easy to make!

Ingredients

2 ripe avocados, diced
1 (6 oz) bag of fresh spinach
1 large ripe mango, diced
1/4 cup sliced almonds
1 small red onion, thinly sliced
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground coriander
3 tablespoons extra virgin olive oil
2 tablespoons honey
1/4 teaspoon salt
Juice of 2 oranges

Method

In a large bowl, whisk together orange juice, olive oil, honey, coriander, salt, and black pepper to create the dressing.

In a separate bowl, toss the spinach with half of the dressing until the leaves are lightly coated.

Add the diced avocado, mango, and thinly sliced red onion to the bowl with the spinach.

Drizzle the remaining dressing over the salad and gently toss to combine.

Sprinkle the sliced almonds and red pepper flakes over the top of the salad.

Serve the salad immediately or chill in the refrigerator for up to an hour before serving to let the flavors meld.
