This is a yummy rice dish with shrimp, pineapple, and veggies. It's sweet and a little spicy. You cook rice and mix it with tasty things like shrimp, pineapple, and peas. It's good for dinner and makes you feel happy!

Ingredients

1 cup jasmine rice
1/3 cup roasted unsalted almonds, chopped
1 lb shrimp, peeled and deveined
1/2 cup frozen peas
1 large carrot, diced
1/2 small pineapple, cut into bite-sized pieces
1 large red bell pepper, diced
2 tablespoons soy sauce
1 tablespoon oyster sauce
2 tablespoons sesame oil
1/4 cup green onions, chopped
1 tablespoon ginger, minced
3 tablespoons sweet chili sauce
1/4 teaspoon white pepper

Method

Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, then set aside to cool.

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil and the shrimp. Cook until the shrimp turn pink and are cooked through, about 2-3 minutes per side. Remove the shrimp and set aside.

In the same skillet, add the remaining tablespoon of sesame oil, diced carrots, and red bell pepper. Stir-fry for about 3 minutes until they start to soften.

Add the ginger and frozen peas to the skillet, and cook for another 2 minutes.

Stir in the cooked rice, pineapple pieces, soy sauce, oyster sauce, sweet chili sauce, and white pepper. Mix well and cook for another 5 minutes, stirring frequently.

Return the cooked shrimp to the skillet and add the chopped almonds. Cook for an additional 2 minutes to heat through.

Garnish with green onions before serving. Enjoy your tropical shrimp fried rice!
