Tropical Pork Burger with Grilled Pineapple & Sweet Potato Fries recipe

This burger is a juicy pork patty with a tropical twist. It has grilled pineapple on top and comes with sweet potato fries. It's a yummy dinner that feels like a beach party in your mouth!

Ingredients

1 lb lean ground pork
1/2 cup panko bread crumbs
2 tbsp soy sauce
1/4 tsp salt
1/4 tsp black pepper
2 cloves garlic, minced
2 x 1 inch pieces ginger root, minced
1 large sweet potato, cut into fries
2 tbsp olive oil
1/2 tsp paprika
4 pineapple rings
4 whole wheat buns
4 lettuce leaves
4 tbsp barbecue sauce
1/2 red onion, sliced into rings

Method

Preheat your oven to 425°F (220°C) for the sweet potato fries.

Toss sweet potato fries with 1 tbsp olive oil, paprika, and a pinch of salt. Spread on a baking sheet and bake for 20-25 minutes until crispy.

Mix ground pork, panko bread crumbs, soy sauce, salt, pepper, minced garlic, and minced ginger in a bowl. Form into 4 patties.

Heat a grill pan over medium-high heat and brush with remaining olive oil.

Grill the pineapple rings for 2 minutes on each side, or until they have nice grill marks. Set aside.

Grill the pork patties for 5 minutes on one side, then flip and grill for another 4 minutes, or until fully cooked.

Toast the whole wheat buns on the grill for about 1 minute, or until lightly toasted.

To assemble the burgers, spread 1 tbsp of barbecue sauce on the bottom half of each bun. Place a lettuce leaf, a pork patty, a grilled pineapple ring, and a few onion rings. Top with the other half of the bun.

Serve each burger with a side of sweet potato fries.
