Tomato Basil Soup recipe


This is a warm, creamy soup made with fresh tomatoes and basil. It's blended until smooth and has a touch of creaminess from butter and cream. It's perfect for a cozy meal!


4 medium-sized fresh tomatoes, peeled, seeded, and chopped
3 cups vegetable broth
12 fresh basil leaves, chopped
3/4 cup heavy cream
1/4 cup unsalted butter
1 teaspoon sugar
Salt to taste
Black pepper to taste


Gather all ingredients.
In a large pot, combine the chopped tomatoes and vegetable broth. Bring to a simmer over medium heat.
Cook for about 20 minutes, or until the tomatoes are very soft.
Remove the pot from heat. Add the chopped basil leaves and sugar to the pot.
Use an immersion blender to purée the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender and blend in batches.
Return the soup to the pot if you used a blender. Stir in the heavy cream and butter over low heat until the butter is melted and the soup is heated through. Do not boil.
Season with salt and pepper to taste.
Serve hot and enjoy!
