Tomato and Carrot Pico De Gallo recipe


This is a fresh, colorful salsa with tomatoes, carrots, and peppers. It's yummy with chips or on top of your favorite Mexican food. You chop veggies, mix them with lime and salt, and it's ready to eat!


5 medium tomatoes, diced and drained
1/2 cup white onion, finely diced
1 large carrot, peeled and shredded
1 jalapeño, seeds removed and finely diced
1/2 cup fresh cilantro, chopped
4 tablespoons lime juice
3/4 teaspoon salt
1 serrano pepper, seeds removed and minced (optional for extra heat)


Place the diced tomatoes in a colander for about 10 minutes to drain excess water, shaking occasionally.
In a medium bowl, combine the drained tomatoes, diced onion, shredded carrot, and diced jalapeño.
If using, add the minced serrano pepper for extra spiciness.
Chop the cilantro and add it to the bowl with the vegetables.
Pour the lime juice over the mixture and sprinkle with salt.
Stir all the ingredients together until well mixed.
Let the Pico De Gallo sit for about 5 minutes to allow the flavors to blend together.
Serve with corn chips, or use as a fresh topping for tacos, burritos, or fajitas.
