Tofu and Almond Stir Fry with Jasmine Rice recipe

This is a yummy dish with rice, tofu, almonds, and veggies. You cook the rice and stir fry the tofu with veggies. Then you mix them together and eat it. It's good for dinner and not too hard to make.

Ingredients

1 cup jasmine rice
2 tablespoons olive oil
14 ounces firm tofu, drained and cubed
1 tablespoon sesame oil
1 large carrot, thinly sliced
1 yellow bell pepper, diced
2 cups snow peas, trimmed
1/2 cup roasted unsalted almonds
2 tablespoons tamari or low-sodium soy sauce
1 tablespoon maple syrup
1 tablespoon rice vinegar
1 teaspoon cornstarch
1/4 teaspoon crushed red pepper flakes
2 cloves garlic, minced
1 inch piece ginger root, minced

Method

Rinse the jasmine rice under cold water, then cook it with 2 cups of water and a pinch of salt according to package instructions.

While the rice cooks, heat olive oil in a large skillet over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.

In the same skillet, add sesame oil, sliced carrot, diced yellow bell pepper, and snow peas. Stir fry until the vegetables are tender-crisp, about 3-4 minutes.

In a small bowl, whisk together tamari, maple syrup, rice vinegar, cornstarch, and crushed red pepper flakes to make the sauce.

Add the minced garlic and ginger to the skillet with the vegetables and cook for another minute until fragrant.

Return the tofu to the skillet with the vegetables and add the roasted almonds. Pour the sauce over the tofu and vegetables, stirring to coat everything evenly. Cook for an additional 2 minutes until the sauce thickens.

Serve the stir fry over the cooked jasmine rice.
