The Best Healthy Apple Bread Ever! Made with all vegan and gluten-free ingredients, this is the ultimate apple cake sweetened with cinnamon coconut sugar.
Ingredients
1.5 cups coconut sugar
1 flax egg (or egg)
1/3 cup liquid coconut oil
1 cup non-dairy milk
1 teaspoon vanilla extract
2.5 cups gluten-free oat flour (or sub gf all purpose)
2 teaspoons baking powder
1 teaspoon cinnamon
1 apple, chopped
Method

Preheat oven to 350 degrees and grease a bread dish with oil and/or line with parchment paper

In a large bowl, mix together coconut sugar, oil, egg, milk and vanilla until smooth

Mix in oat flour, baking powder and cinnamon until fully combined

Fold in apples then add to bread dish – I also sprinkle some extra coconut sugar and cinnamon top here for sweetness

Bake in oven for 40-50 minutes, or until finished. I stick a toothpick in to see if it is ready!

Allow the bread to cool for a few then slice and enjoy!
