Thai-Style Pork and Noodles with Cilantro and Lime recipe

This is a yummy noodle dish with pork. It has fresh greens and a tangy lime taste. You cook the pork with garlic and ginger. Then you mix it with noodles and greens. Top it with cilantro and lime for a fresh flavor.

Ingredients

1 x (5 oz) pkg baby spinach
1 small bunch fresh cilantro
4 cloves garlic
1 x 1 inch piece ginger root
2 limes
6 pork sausages
10 oz rice noodles
1/4 tsp black pepper
2 tbsp soy sauce
1/4 tsp salt
2 tbsp sesame oil

Method

Fill a large pot with water and bring to a boil over high heat for the noodles.

Wash and dry the fresh produce. Peel and mince the garlic and ginger. Cut the limes in half and set aside.

In a skillet over medium-high heat, add sesame oil and swirl to coat the bottom.

Cut the pork sausage open at one end and squeeze the contents into the skillet, discarding the casing. Add the minced garlic and ginger. Cook, breaking the sausage apart with a spatula, until browned, about 5 minutes.

Add the rice noodles to the boiling water and cook according to package instructions until tender, then drain and set aside.

Reduce the skillet heat to low. Add the baby spinach and cook, stirring, until wilted.

Stir in the cooked noodles, the juice of 1 lime, soy sauce, salt, and black pepper. Cook, stirring constantly, until well combined.

Pick the cilantro leaves off the stems and roughly chop them.

Divide the noodle mixture among bowls. Garnish with chopped cilantro and a squeeze of lime juice from the remaining lime halves. Serve immediately.
