This recipe is for yummy chicken meatballs with a spicy mango salad. You mix ground chicken with tasty spices and cook them. Then you make a salad with mango, veggies, and a sweet and spicy dressing. It's a fun meal that's a little bit different!

Ingredients

1 ripe mango, peeled and cut into matchsticks
1 large carrot, peeled and cut into matchsticks
1 red bell pepper, thinly sliced
1/4 cup fresh basil leaves, chopped
1 lb ground chicken
1 large egg
1/2 cup panko bread crumbs
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon lime juice
1 tablespoon honey
1 tablespoon chili garlic sauce
1 teaspoon grated ginger
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
1/4 cup roasted unsalted peanuts, chopped

Method

In a large bowl, combine the mango, carrot, red bell pepper, and basil. Set aside for the salad.

In another bowl, mix together the ground chicken, egg, panko bread crumbs, 1 tablespoon soy sauce, fish sauce, half of the grated ginger, and minced garlic. Season with salt and pepper.

Form the chicken mixture into 1-inch meatballs and place them on a plate.

Heat vegetable oil in a skillet over medium-high heat. Add the meatballs and cook for 8-10 minutes, turning occasionally, until they are golden brown and cooked through.

While the meatballs are cooking, make the dressing for the salad by whisking together lime juice, honey, chili garlic sauce, the remaining soy sauce, and the remaining grated ginger in a small bowl.

Pour the dressing over the mango salad and toss to coat.

Serve the chicken meatballs with the spicy mango salad and sprinkle with chopped peanuts.
