Thai Peanut Chicken Lettuce Wraps Recipe


This is a yummy wrap with chicken and veggies. It has peanuts and a special sauce. You wrap it in lettuce. It's fun to make and eat!


2 cups shredded rotisserie chicken
1 large carrot, peeled and grated
1 red bell pepper, thinly sliced
1/4 cup chopped cilantro
1/4 cup chopped peanuts
1 head iceberg lettuce, leaves separated
2 tablespoons soy sauce
1 tablespoon peanut butter
1 tablespoon honey
1 tablespoon fresh lime juice
1 teaspoon chili garlic sauce
1 teaspoon grated ginger


In a large bowl, combine 2 cups of shredded rotisserie chicken, 1 large grated carrot, 1 thinly sliced red bell pepper, and 1/4 cup of chopped cilantro.
In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of peanut butter, 1 tablespoon of honey, 1 tablespoon of fresh lime juice, 1 teaspoon of chili garlic sauce, and 1 teaspoon of grated ginger to make the peanut sauce.
Pour the peanut sauce over the chicken mixture and toss until everything is well coated.
Take a leaf of iceberg lettuce and place a scoop of the chicken mixture in the center. Sprinkle with chopped peanuts.
Fold the lettuce leaf around the filling to create a wrap. Repeat with the remaining ingredients.
Serve the wraps immediately, with extra peanut sauce on the side for dipping if desired.
