This is a yummy salad with chicken, crunchy veggies, and homemade croutons. It has a special peanut dressing that makes it taste a little like Thai food. It's easy to make and really good to eat!

Ingredients

1/2 cup creamy peanut butter
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon lime juice
1/4 cup warm water
1 English cucumber, quartered lengthwise and sliced
1 bunch radishes, thinly sliced
4 hearts romaine lettuce, chopped
20 oz rotisserie chicken, shredded
1 small red onion, thinly sliced
2 teaspoons sesame seeds
4 slices multigrain bread, cut into 1-inch cubes
2 tablespoons sesame oil
1/2 teaspoon garlic powder
1/2 teaspoon salt

Method

Preheat your oven to broil on high and place the rack in the upper third of the oven.

In a small bowl, whisk together the peanut butter, soy sauce, honey, lime juice, and warm water until smooth to make the dressing.

In a large bowl, combine the cucumber, radishes, romaine lettuce, and red onion.

Add the shredded chicken to the vegetables and pour the peanut dressing over the salad. Toss everything together until well coated.

For the croutons, toss the bread cubes with sesame oil, garlic powder, salt, and sesame seeds in a bowl.

Spread the bread cubes on a baking sheet and broil for about 3-5 minutes, or until they are golden and crispy. Watch them closely to prevent burning.

Serve the salad on plates or in bowls and top with the sesame croutons.
