Thai Chicken Salad with Peanut Dressing and Veggie Noodles recipe

This is a yummy salad with chicken and noodles made from veggies. It has a spicy peanut sauce that is a little sweet and a little hot. You mix everything together and it's ready to eat!

Ingredients

3 medium carrots
1 lb chicken breasts, boneless skinless
1 small bunch cilantro
2 cloves garlic
2 x 1 inch pieces ginger root
1 lime
3 medium zucchini squash
1/4 tsp black pepper
1/4 tsp crushed red pepper
3 tbsp natural peanut butter
1/2 tsp salt
1 tbsp sesame seeds
2 tbsp soy sauce
1 tbsp virgin coconut oil
1 tbsp honey

Method

Peel and mince the garlic. Peel and grate the ginger. In a bowl, mix the garlic, ginger, peanut butter, soy sauce, juice of the lime, crushed red pepper, and honey to make the dressing. Put it to the side.

Clean the carrots and zucchini. Cut off the ends. Make noodles from the carrots and zucchini with a peeler. Put them in a big bowl.

Warm up a pan on medium heat.

Cut the chicken in half to make it thin. Sprinkle salt and pepper on both sides.

Put coconut oil in the pan. Cook the chicken until it's brown and done, about 3-4 minutes each side. Take it out and let it cool.

In the same pan, cook the carrot and zucchini noodles for 2-3 minutes until they're soft. Put them back in the big bowl.

Clean the cilantro. Take the leaves off the stems and chop them up. Add them to the bowl with the noodles.

Cut the chicken into small pieces and add them to the bowl. Mix everything together.

Put the salad in bowls. Pour the peanut dressing on top. Sprinkle sesame seeds over it. Now it's ready to eat!
