Teriyaki Udon with Chicken and Vegetables recipe

This dish is a twist on a classic noodle recipe. It has thick udon noodles, chicken, and veggies all mixed in a sweet teriyaki sauce. It's easy to make and very yummy. You can have it ready in just 30 minutes!

Ingredients

200 grams udon noodles
1 tablespoon vegetable oil
500 grams chicken breast, thinly sliced
2 medium carrots, julienned
1 large bell pepper, sliced
100 grams snow peas, trimmed
30 ml teriyaki sauce
15 ml soy sauce
5 ml honey
1 teaspoon garlic powder
1 teaspoon ginger, grated
Salt to taste
Sesame seeds for garnish

Method

Fill a large pot with water and bring to a boil. Cook the udon noodles according to the package instructions, then drain and set aside.

In a small bowl, mix together the teriyaki sauce, soy sauce, honey, garlic powder, and grated ginger to create the sauce.

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and a pinch of salt, and cook until browned and cooked through, about 5-7 minutes.

Add the carrots, bell pepper, and snow peas to the skillet with the chicken. Cook for another 2-3 minutes until the vegetables are slightly tender but still crisp.

Pour the sauce mixture over the chicken and vegetables, stirring to coat everything evenly.

Add the cooked udon noodles to the skillet and toss everything together until the noodles are heated through and coated with the sauce.

Serve the teriyaki udon in bowls, garnished with sesame seeds.
