This is a yummy fish dish with a sweet and tangy sauce. The salmon is cooked until it's just right. It's served with tasty noodles made from veggies. It's a fun dinner!

Ingredients

4 (6-ounce) salmon fillets
2 cloves garlic, minced
2 teaspoons grated ginger
3 tablespoons rice wine vinegar
4 tablespoons low sodium soy sauce
4 tablespoons honey
3 tablespoons sesame oil, divided
12 ounces broccoli florets, spiralized or chopped
12 ounces carrots, spiralized or thinly sliced
1/2 cup vegetable broth
1 tablespoon cornstarch
1 tablespoon water

Method

In a small bowl, whisk together the garlic, ginger, rice wine vinegar, 3 tablespoons of soy sauce, honey, and 1 tablespoon of sesame oil to create the teriyaki sauce.

Place the salmon fillets in a dish and pour half of the teriyaki sauce over them, making sure they are well coated. Let them marinate for 15 minutes.

In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add the salmon fillets and cook for about 3 minutes on each side, or until cooked through and golden brown. Remove from the skillet and keep warm.

In the same skillet, add the remaining 1 tablespoon of sesame oil. Add the broccoli and carrots, and stir-fry for about 3 minutes.

Mix the cornstarch and water in a small bowl to create a slurry. Add the vegetable broth, the remaining 1 tablespoon of soy sauce, and the cornstarch slurry to the skillet with the vegetables. Cook for another 2 minutes, or until the sauce thickens and the vegetables are tender.

Serve the salmon over the vegetables and drizzle with the remaining teriyaki sauce.
