Sweet Potato & Spinach Hash with Poached Eggs & Cheddar recipe

This is a warm, colorful hash made with sweet potatoes and spinach, topped with soft poached eggs and melted cheddar cheese. It's a yummy breakfast that fills you up and makes you happy. You cook the veggies, then the eggs, and put cheese on top!

Ingredients

4 large eggs
1 clove garlic
50 g sharp cheddar cheese
1 large sweet potato
1/2 medium yellow onion
100 g fresh spinach
1/4 tsp black pepper
1/2 tsp salt
2 tbsp olive oil
1 tbsp white vinegar

Method

Wash and dry all produce. Peel and dice the sweet potato into 1-inch cubes; transfer to a bowl.

Peel and finely chop the onion. Mince the garlic clove.

Heat a nonstick skillet over medium heat and add 1 tablespoon of olive oil.

Add the sweet potatoes to the skillet; cook, stirring occasionally, until they start to soften, about 10 minutes.

Add the chopped onion and garlic to the skillet with the sweet potatoes; cook, stirring frequently, until the onion is translucent and sweet potatoes are tender, about 5 minutes.

Stir in the fresh spinach and cook until just wilted, about 2 minutes. Season the hash with salt and pepper.

While the hash is cooking, bring a pot of water to a boil. Reduce to a simmer and add 1 tablespoon of white vinegar.

Crack the eggs into the water one at a time, and poach for 3 to 4 minutes for runny yolks, or longer for firmer yolks. Remove with a slotted spoon and drain on a paper towel.

Grate the cheddar cheese.

To serve, divide the hash between plates, place a poached egg on top of each, and sprinkle with grated cheddar cheese. Enjoy your warm and comforting meal!
