Sweet and Spicy Shrimp with Mango and Peppers over Vermicelli recipe

This dish is a stir-fry with shrimp, sweet mango, and crunchy bell peppers. It's mixed with thin vermicelli noodles and a sweet and spicy sauce. It's a yummy meal with lots of colors and flavors.

Ingredients

1 clove garlic, minced
1 medium mango, peeled and diced
1 lb raw peeled shrimp, fresh or frozen
1 large red bell pepper, sliced
1 large yellow bell pepper, sliced
8 oz vermicelli noodles
3 tbsp sweet chili sauce
1 tbsp soy sauce
1/4 tsp red pepper flakes
2 tbsp vegetable oil
Salt to taste

Method

Fill a large pot halfway with water and bring to a boil. Add vermicelli noodles and cook according to package instructions, usually 3-5 minutes. Drain and rinse under cold water. Set aside.

While the water is heating, prepare the ingredients: Peel and mince the garlic. Wash, peel, and dice the mango. Slice the red and yellow bell peppers. If using frozen shrimp, thaw them under cold water and pat dry with paper towels.

Heat a large skillet or wok over medium-high heat. Add vegetable oil and swirl to coat the bottom.

Add the minced garlic, bell peppers, and a pinch of salt to the skillet. Stir-fry for 2-3 minutes until the peppers start to soften.

Add the shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and are cooked through.

Stir in the diced mango, sweet chili sauce, soy sauce, and red pepper flakes. Cook for another 2 minutes, stirring frequently.

Add the cooked vermicelli noodles to the skillet. Toss everything together and cook for an additional 2 minutes, or until everything is heated through.

Taste and adjust seasoning with salt if necessary.
