Ingredients
2 tablespoons extra virgin olive oil
1 yellow onion (small, diced)
1 1/2 cups mixed vegetables (frozen, diced (defrost before using))
3 garlic cloves (minced)
4 cups cauliflower rice
1/2 cup mushrooms (finely chopped)
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon black pepper
3 tablespoons lite soy sauce (more or less to taste)
