These stuffed bell pepper cups are filled with spicy black beans and topped with melted cheddar cheese. They're like little bites of happiness that you can eat with your hands. They're colorful, cheesy, and a little bit spicy. You can make them for a fun snack or a tasty side dish.

Ingredients

4 red bell peppers
2 x (15 oz) cans black beans
1 1/4 cups salsa
1 1/4 cups shredded cheddar cheese
1 teaspoon cumin powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper

Method

Preheat the oven to broil on high and position the rack in the upper third of the oven. Optionally, line a baking sheet with aluminum foil for easier clean-up.

Wash the red bell peppers, cut them lengthwise into halves, remove and discard the seeds and white membrane. Then, cut each half into 3 pieces to create cups.

Arrange the bell pepper cups, skin-side down, in a single layer on the prepared baking sheet.

Drain and rinse the black beans in a colander. Transfer them to a medium bowl.

Add cumin powder, garlic powder, salt, and black pepper to the beans. Stir until the beans are evenly seasoned.

Spoon the seasoned black beans into each bell pepper cup, filling them nearly to the top.

Sprinkle shredded cheddar cheese over the black beans in each cup.

Place the baking sheet in the oven and broil until the beans are heated through and the cheese is melted and bubbly, about 3-5 minutes.

Carefully remove the baking sheet from the oven. Let the stuffed bell pepper cups cool for a minute.

To serve, place the stuffed bell pepper cups on a plate and top each with a spoonful of salsa. Enjoy while warm!
