Spinach with Creamy Tofu Dressing recipe

This is a healthy spinach dish with a creamy tofu dressing. You mix tofu, lemon, and oils to make a yummy sauce. Then you put it on top of fresh spinach. It's good for you and tastes great!

Ingredients

4 tbsp extra virgin olive oil
2 tbsp soy sauce
4 tsp lemon juice
2 tsp sesame oil
20 g caster sugar
50 g firm tofu
2 tbsp unsweetened almond milk
2 tbsp grapeseed oil
400 g fresh spinach

Method

Wash the spinach leaves and pat them dry with a towel. Place them in a large bowl.

For the tofu sauce, blend 50 g of firm tofu, 2 tbsp of unsweetened almond milk, 2 tsp of lemon juice, and a pinch of salt until smooth. Slowly whisk in 2 tbsp of grapeseed oil to emulsify. The texture should be creamy, similar to a thick yogurt.

To make the dressing, whisk together 4 tbsp of extra virgin olive oil, 2 tbsp of soy sauce, 2 tsp of sesame oil, and 20 g of caster sugar until well combined.

Pour the dressing over the spinach and toss until the leaves are evenly coated.

Drizzle the creamy tofu sauce over the dressed spinach just before serving.
