This is a yummy, cheesy quesadilla filled with spinach, mozzarella, and red peppers. It comes with a sweet fruit salad that has oranges and honey. It's easy to make and very tasty!

Ingredients

2 cups fresh spinach leaves
1 x 8 oz block mozzarella cheese
1 red bell pepper
4 large whole wheat tortillas
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 oranges
1 tablespoon honey
1 tablespoon fresh mint leaves, chopped
1 cup strawberries, hulled and quartered

Method

Wash and dry the fresh spinach and red bell pepper.

Cut the red bell pepper into thin strips.

Coarsely grate the mozzarella cheese.

In a large skillet over medium heat, add 1/2 tablespoon of olive oil.

Add the spinach leaves and red bell pepper strips to the skillet. Cook for 2-3 minutes until the spinach is wilted and the peppers are slightly soft.

Season the spinach and peppers with garlic powder, onion powder, salt, and black pepper. Remove from heat and set aside.

Lay the whole wheat tortillas flat and divide the spinach, red pepper, and grated mozzarella between them, arranging on one half of each tortilla; fold in half to close.

Wipe the skillet clean and return to medium heat with the remaining 1/2 tablespoon of olive oil.

Place the assembled quesadillas in the skillet and cook for 3-4 minutes on each side, until the tortillas are golden brown and the cheese has melted.

While the quesadillas are cooking, peel and segment the oranges, removing any seeds.

In a medium bowl, combine the orange segments, strawberries, honey, and chopped mint leaves. Stir gently to mix the salad.

Cut each quesadilla into wedges and serve with the honey citrus salad on the side.
