Spicy Vegan Sausage and Tomato Gnocchi recipe


This is a yummy dish with little balls of potato called gnocchi. They are cooked with spicy fake sausage, sweet tomatoes, and green spinach. It's all made in one pan and tastes really good!


6 Vegan Sausages
1 Tbsp Smoked Paprika
1/2 Tsp Cayenne Pepper
1 Yellow Bell Pepper
1 Red Bell Pepper
300 g Cherry Tomatoes
2 Garlic Cloves
1 Small Red Onion
500 g Gnocchi
2 Tbsp Balsamic Vinegar
2 Tbsp Vegan Sour Cream
1 Cup Fresh Spinach
Salt to taste
Black Pepper to taste


Chop the yellow and red bell peppers into bite-sized pieces.
Slice the cherry tomatoes in half and finely chop the garlic and red onion.
In a large pan, crumble the vegan sausages and cook over medium heat for about 5 minutes until they start to brown.
Add the smoked paprika and cayenne pepper to the sausages and stir well, cooking for another 2 minutes.
To the pan, add the chopped peppers, cherry tomatoes, garlic, and red onion. Cook for another 5 minutes until the vegetables soften.
Meanwhile, in a separate bowl, cover the gnocchi with boiling water and let it sit for 2 minutes, then drain.
Add the drained gnocchi to the pan with the sausage and vegetables. Pour in the balsamic vinegar and stir everything together.
Stir in the vegan sour cream and fresh spinach, cooking for another 3 minutes until the spinach wilts and the gnocchi is heated through.
Season with salt and black pepper to taste.
Serve hot, garnished with additional fresh spinach if desired.
