Spicy Turkey Chili Pasta with Red Bell Pepper recipe

This is a yummy pasta dish with turkey, red bell pepper, and a spicy tomato sauce. It's cheesy and perfect for dinner. You cook pasta, brown turkey, and mix it all with cheese and spices.

Ingredients

8 oz elbow pasta
1 lb ground turkey
1 large red bell pepper
1 large yellow onion
3 cloves garlic
1 can (14.5 oz) fire-roasted diced tomatoes
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp ground cumin
1/4 tsp black pepper
1 tsp salt
6 oz Monterey Jack cheese
1/4 cup chopped fresh cilantro

Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the elbow pasta and cook according to package instructions until al dente. Drain and set aside.

While the pasta cooks, dice the red bell pepper and yellow onion, mince the garlic, and grate the Monterey Jack cheese.

In a large skillet over medium-high heat, cook the ground turkey until browned, about 5-7 minutes. Transfer to a plate and set aside.

In the same skillet, add the diced bell pepper and onion. Cook for 3-4 minutes until softened.

Add the minced garlic, chili powder, smoked paprika, cumin, salt, and black pepper to the skillet. Cook for another minute until fragrant.

Return the browned turkey to the skillet and add the fire-roasted diced tomatoes. Bring to a simmer and cook for 5 minutes.

Lower the heat and stir in the cooked pasta and grated cheese until the cheese is melted and the pasta is coated with the sauce.

Remove from heat and stir in the chopped cilantro.

Serve hot, garnished with additional cilantro if desired.
