Spicy Tomato Gnocchi with Garlic Brown Butter recipe

This is a yummy pasta dish made with potato dumplings called gnocchi. They are cooked until soft, then mixed with a spicy tomato sauce and a special butter. It's topped with cheese and a green herb called parsley.

Ingredients

800 g baking potatoes
Pinch of fresh nutmeg
120 g all-purpose flour
3 Tbsp unsalted butter
2 cloves garlic, minced
1 Tbsp tomato paste
1/2 tsp red pepper flakes
30 g Parmesan cheese, finely grated
1 Tbsp fresh parsley, chopped
Salt and pepper to taste

Method

Preheat your oven to 200°C (400°F). Prick the potatoes all over with a fork and place them on a baking tray. Roast for 60 minutes or until they are soft inside.

Let the potatoes cool slightly, then cut them in half and scoop out the flesh. Pass the potato flesh through a sieve onto a floured surface. Season with salt, pepper, and a pinch of nutmeg.

Sprinkle the flour over the potato mixture. Use a knife to mix until crumbly, then use your hands to form a dough. Divide the dough into 8 pieces and roll each into a long log.

Cut the logs into 3 cm pieces to form gnocchi. Place them on a floured tray and cover with a damp cloth to prevent drying.

Bring a large pot of salted water to a boil. Cook the gnocchi in batches for about 2 minutes or until they float to the surface. Use a slotted spoon to transfer them to a plate.

In a frying pan, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant. Stir in the tomato paste and red pepper flakes, cooking for another minute.

Add the cooked gnocchi to the pan with the tomato mixture and toss to coat. Cook until the gnocchi are golden and crispy.

In another pan, melt the remaining 1 tablespoon of butter over medium heat. Cook, stirring constantly, until the butter turns a nutty brown color.

Pour the brown butter over the gnocchi and toss to combine. Season with salt and pepper to taste.

Serve the gnocchi hot, sprinkled with grated Parmesan cheese and chopped parsley.
