Spicy Tomato and Sausage Pasta recipe

This pasta dish is full of spicy flavors with juicy tomatoes and sausage. It's a yummy dinner that's ready in less than 30 minutes. You'll cook pasta and mix it with a homemade spicy tomato sauce and sausage. Top with cheese and enjoy!

Ingredients

1 small Yellow Onion
3 Garlic Cloves
1 Green Chilli
300 g Cherry Tomatoes
100 g Spicy Italian Sausage
400 g Penne Pasta
1 Tbsp Red Wine Vinegar
60 g Parmesan Cheese
30 g Fresh Parsley
2 Tbsp Olive Oil
Salt to taste

Method

Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the penne pasta and cook according to the package instructions until al dente.

While the pasta is cooking, thinly slice the yellow onion, mince the garlic cloves, and finely chop the green chilli. Cut the cherry tomatoes in half.

In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat. Add the onion, garlic, and chilli to the pan and sauté for 3-4 minutes until the onion is translucent.

Crumble the spicy Italian sausage into the pan and cook for 4-5 minutes until browned, breaking it apart with a spatula.

Stir in the halved cherry tomatoes and cook for another 3 minutes, until the tomatoes start to soften.

Season with salt to taste and add a splash of red wine vinegar, then reduce the heat to low.

Drain the cooked pasta, reserving a cup of the pasta water. Add the pasta to the sauce in the frying pan, tossing to combine. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.

Grate the Parmesan cheese over the pasta and toss again to melt the cheese into the sauce.

Chop the fresh parsley and sprinkle over the pasta before serving.
