Spicy Tofu & Veggie Wraps with Creamy Avocado Recipe


These wraps are filled with spicy tofu and colorful veggies, all wrapped up in a soft tortilla. Creamy avocado spread adds a cool touch. It's a fun meal you can hold in your hand!


1 large avocado
1/4 cup chopped fresh cilantro
14 oz extra firm tofu
2 cloves garlic, minced
1 yellow bell pepper
1 orange bell pepper
1 large red onion
6 small whole wheat tortillas
1/4 teaspoon black pepper
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
2 tablespoons olive oil
1 tablespoon lime juice


Wash and dry all produce. Halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth.
Finely chop the cilantro. Stir half into the mashed avocado with lime juice, minced garlic, salt, and pepper. Set aside the remaining cilantro for garnish.
In a small bowl, mix together chili powder, smoked paprika, cumin, and a pinch of salt.
Drain the tofu and press out excess moisture with paper towels. Slice into 1/2-inch-thick strips.
Toss tofu strips in the spice mixture until well coated.
Heat olive oil in a skillet over medium-high heat. Add tofu strips and cook until golden brown on all sides, about 10 minutes. Remove from skillet and set aside.
Slice yellow and orange bell peppers and red onion into thin strips.
In the same skillet, add more oil if needed, and sauté bell peppers and onion until tender-crisp, about 5 minutes.
Warm tortillas in the microwave for 15 seconds or until soft.
Spread a layer of the avocado mixture on each tortilla, add tofu and veggies, and sprinkle with the remaining cilantro.
Fold the tortillas around the filling and serve with extra lime wedges if desired.
