Spicy Tofu Stir-Fry with Peanuts and Broccoli recipe

This is a yummy dish with tofu, broccoli, and peanuts. It's spicy and has a sauce that makes it taste so good. You cook the tofu until it's crispy, then mix it with the veggies and sauce. Serve it over rice for a full meal.

Ingredients

14 oz extra firm tofu
1 tablespoon cornstarch
1/2 teaspoon salt
2 tablespoons vegetable oil
1 large broccoli head, cut into florets
1/2 cup roasted unsalted peanuts
2 cloves garlic, minced
1 inch ginger root, minced
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon brown sugar
1 tablespoon chili garlic sauce
1 teaspoon toasted sesame oil
1 cup jasmine rice
2 cups water
1/4 teaspoon salt for rice

Press the tofu by wrapping it in clean towels and placing a heavy object on top for 15 minutes to remove excess water.

Rinse the jasmine rice under cold water, then add it to a saucepan with 2 cups of water and 1/4 teaspoon of salt. Bring to a boil, then cover and simmer for 18 minutes. Remove from heat and let it stand covered for 5 minutes.

Cut the tofu into cubes and toss with cornstarch and 1/2 teaspoon of salt.

Heat 1 tablespoon of vegetable oil in a pan over medium-high heat. Add the tofu and cook until crispy, about 10 minutes. Remove tofu and set aside.

In the same pan, add another tablespoon of oil and the broccoli florets. Cook until they are bright green and slightly tender, about 5 minutes.

For the sauce, mix soy sauce, rice vinegar, brown sugar, chili garlic sauce, and toasted sesame oil in a bowl.

Add the minced garlic and ginger to the broccoli and cook for 1 minute.

Return the tofu to the pan with the broccoli, pour in the sauce, and add the peanuts. Cook everything together until the sauce thickens, about 2 minutes.

Serve the tofu stir-fry over the cooked jasmine rice.
