Spicy Shrimp Fried Rice recipe

This is a yummy rice dish with shrimp and veggies. It has eggs, peas, and a spicy sauce. You cook rice, then mix it with cooked veggies and shrimp. Put a fried egg on top and eat!

Ingredients

2 medium carrots
1 large yellow onion
4 cloves of garlic
1 tablespoon of grated ginger
6 large eggs
1 green chili
1/2 cup of chopped cilantro
450 g of cooked jasmine rice
2 tablespoons of soy sauce
1 tablespoon of oyster sauce
300 g of raw shrimp, peeled and deveined
1 cup of frozen peas
3 tablespoons of vegetable oil
2 teaspoons of sesame oil
Salt to taste

Method

Grate the carrots and ginger. Finely chop the green chili, garlic, cilantro, and onion.

Heat 2 tablespoons of vegetable oil in a large pan over medium heat. Add the onions and garlic, cook until softened.

Increase the heat to high, add the grated ginger, chopped green chili, and shrimp. Cook until the shrimp turn pink.

Add the grated carrots and cook for 2 minutes. Stir in the frozen peas and cook for another 2 minutes.

Add the cooked jasmine rice, soy sauce, and oyster sauce. Stir everything together and cook for 5 minutes, or until the rice starts getting crispy.

Push the rice to one side of the pan. Add the remaining 1 tablespoon of vegetable oil and crack 4 eggs into the pan. Scramble the eggs and then mix into the rice.

Drizzle sesame oil over the fried rice and add chopped cilantro. Stir to combine and season with salt to taste.

In a separate pan, fry the remaining 2 eggs. Serve the fried rice with a fried egg on top of each portion.
