These fritters are like little golden bites of the sea with a spicy kick. You mix chopped shrimp with corn and spices, then fry them until they're crispy. They're great for sharing with friends or as a fun dinner treat!

Ingredients

3 spring onions, finely sliced
1/4 cup chopped fresh cilantro
250 g shrimp, roughly chopped
150 g cornmeal
75 g all-purpose flour
1 1/2 tsp Creole seasoning
120 ml buttermilk
1 tbsp honey
1 large egg
30 g sour cream
1 tbsp hot sauce
1 tsp smoked paprika
Vegetable oil for frying

Method

In a large mixing bowl, combine the cornmeal, all-purpose flour, Creole seasoning, and smoked paprika. Add a pinch of salt and mix well.

Make a well in the center of the dry ingredients and pour in the buttermilk, honey, and egg. Whisk together until you have a thick batter.

Fold in the spring onions, cilantro, and chopped shrimp until everything is well combined.

Heat vegetable oil in a medium-sized saucepan to 175°C (350°F).

Using a small ice cream scoop or two spoons, scoop the batter and carefully drop it into the hot oil. Fry the fritters for about 3-4 minutes or until they are golden and crispy. Cook in batches to avoid overcrowding the pan.

Remove the fritters with a slotted spoon and drain on paper towels.

In a small bowl, mix together the sour cream and hot sauce to make a spicy dipping sauce.

Serve the shrimp corn fritters hot with the spicy dipping sauce on the side.
