Spicy Sausage and Tomato Penne recipe


This is a pasta dish with a kick! It has penne noodles mixed with spicy sausage, tomatoes, and a hint of sweetness from honey. It's topped with fresh parsley and grated cheese. It's yummy and easy to make for dinner.


400 g penne pasta
1 pot of pitted Kalamata olives, roughly chopped
200 g spicy Italian sausage, casing removed
4 garlic cloves, minced
400 g canned diced tomatoes
1 tbsp honey
1 tbsp capers
1 small bunch of fresh parsley, chopped
50 g Pecorino Romano cheese, grated
2 tbsp olive oil


Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the penne pasta and cook according to the package instructions, minus 1 minute for al dente texture.
While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the spicy Italian sausage and cook, breaking it apart with a spoon, until browned, about 5 minutes.
Add the minced garlic to the skillet and cook for another minute until fragrant.
Stir in the canned diced tomatoes with their juice and honey. Bring the mixture to a simmer.
Mix in the chopped Kalamata olives and capers, and continue to simmer the sauce until the pasta is ready, stirring occasionally.
Drain the pasta and add it to the skillet with the sausage and tomato sauce. Toss to combine and cook for an additional minute.
Remove from heat, sprinkle with chopped parsley, and serve with grated Pecorino Romano cheese on top.
