Spicy Sausage and Potato Roast recipe


This is a yummy dish with spicy sausage, potatoes, and veggies. You cook it all on one big pan. It's easy to make and tastes really good. You can share it with your family for dinner.


800 g baby potatoes
1 red onion
1 red bell pepper
2 garlic cloves
1 bunch of cilantro
2 tbsp balsamic vinegar
1 tsp smoked paprika
250 g spicy sausage links
2 tbsp olive oil
Salt and pepper to taste


Preheat your oven to 200°C (392°F).
Wash the baby potatoes and cut them in half. Place them in a pot of salted water, bring to a boil, and cook for 7 minutes. Then drain them.
While the potatoes are boiling, peel and chop the red onion, deseed and slice the red bell pepper, and peel and mince the garlic cloves.
Cut the spicy sausage links into 1/2 inch slices.
In a large roasting tray, combine the boiled potatoes, sliced sausage, chopped red onion, and sliced red bell pepper. Drizzle with olive oil, sprinkle with smoked paprika, salt, and pepper, and toss everything together.
Spread the mixture in a single layer on the tray and roast in the oven for 25 minutes, or until the potatoes are golden and the sausage is cooked through.
While the traybake is roasting, make the dressing by finely chopping the cilantro and mixing it with the balsamic vinegar and a pinch of salt and pepper.
Once the traybake is done, remove it from the oven and let it cool for a couple of minutes.
Drizzle the balsamic cilantro dressing over the traybake before serving.
