Spicy Sausage and Bell Pepper Orzo recipe

This dish is a yummy pasta with spicy sausage and sweet bell peppers. We cook the orzo like rice, which makes it creamy and soft. Bright herbs and tomatoes add fresh flavors. It's a warm, filling meal for dinner.

Ingredients

1 tablespoon olive oil
200 g Italian sausage, casing removed
1 tablespoon red pepper flakes
3 cloves of garlic, minced
1 yellow bell pepper, diced
1 red bell pepper, diced
1 orange bell pepper, diced
300 g grape tomatoes, halved
400 g canned diced tomatoes
700 ml chicken broth
350 g orzo pasta
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped

Method

Preheat your oven to 200°C (392°F).

Toss the diced bell peppers and grape tomatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.

While the vegetables are roasting, heat a large pan over medium heat. Add the Italian sausage and red pepper flakes, breaking the sausage apart with a spoon. Cook until browned, about 5 minutes.

Add the minced garlic to the sausage and cook for another 2 minutes, until fragrant.

Stir in the canned diced tomatoes and chicken broth, then bring to a simmer.

Add the orzo to the pan, stirring well. Cook for 10 minutes, or until the orzo is al dente, stirring occasionally to prevent sticking.

Once the orzo is cooked, remove the pan from heat. Stir in the roasted bell peppers and tomatoes.

Garnish with chopped basil and parsley before serving.
