Spicy Sausage and Bean Stew recipe


This stew is a warm, hearty dish with spicy sausage and beans. It's filled with veggies and has a smoky flavor. You cook it all in one pot, so it's not too hard to make. It's perfect for a cozy dinner!


2 Tbsp Olive Oil
1 Large Onion, diced
1 Carrot, diced
2 Sticks of Celery, diced
1 Red Bell Pepper, diced
200 g Andouille Sausage, sliced
1 Tsp Ground Cumin
1 Tsp Chili Powder
400 ml Vegetable Stock
200 ml Tomato Sauce
1 x (400 g) Tinned Kidney Beans, drained and rinsed
1 x (400 g) Tinned Black Beans, drained and rinsed
Salt and Pepper to taste
2 Tbsp Fresh Cilantro, chopped


Heat the olive oil in a large saucepan over medium heat.
Add the diced onions, carrot, celery, and red bell pepper to the pan. Cook for about 5 minutes until the vegetables are soft.
Put the sliced andouille sausage into the pan and cook for another 5 minutes until it starts to brown.
Sprinkle in the ground cumin and chili powder, and stir well to coat the sausage and vegetables.
Pour in the vegetable stock and tomato sauce, then bring the mixture to a boil.
Reduce the heat to a simmer and add the kidney beans and black beans to the pot.
Let the stew simmer for about 50 minutes, or until the flavors have melded together and the stew has thickened.
Season the stew with salt and pepper to taste.
Serve the stew hot, garnished with chopped fresh cilantro.
