Spicy Salmon Quesadillas with Mango Salsa recipe

This recipe is for cheesy quesadillas filled with spicy salmon. We make a fresh mango salsa to go with it. It's a yummy meal with fish, cheese, and fruit. You cook it in a pan until it's crispy and golden.

Ingredients

2 ripe mangos, diced
1 small red onion, finely chopped
1 jalapeno, seeded and minced
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper
300 g canned salmon, drained
1 tablespoon adobo sauce
1 teaspoon smoked paprika
200 g Monterey Jack cheese, shredded
8 flour tortillas
1 tablespoon vegetable oil

Method

To make the mango salsa, combine diced mangos, chopped red onion, minced jalapeno, chopped cilantro, lime juice, salt, and pepper in a bowl. Set aside for flavors to meld.

In another bowl, mix the drained salmon with adobo sauce and smoked paprika.

Spread a portion of the salmon mixture on one half of a tortilla, sprinkle a generous amount of Monterey Jack cheese on top, and fold the tortilla over to create a half-moon shape.

Heat a teaspoon of vegetable oil in a large non-stick frying pan over medium heat. Place the quesadilla in the pan and cook for about 2 minutes on each side, or until the tortilla is golden brown and the cheese has melted.

Remove the quesadilla from the pan and keep warm. Repeat with the remaining tortillas, salmon mixture, and cheese.

Cut the cooked quesadillas into wedges and serve with the fresh mango salsa.
