Spicy Roasted Cauliflower and Black Bean Tacos with Avocado-Lime Sauce recipe


These tacos are filled with spicy roasted cauliflower and black beans. They come with a creamy avocado-lime sauce. It's a yummy meal with veggies and beans wrapped in a soft tortilla.


1 medium head cauliflower, cut into florets
1 (15 oz) can black beans, drained and rinsed
1 small bunch cilantro, leaves minced
4 cloves garlic, minced
1 jalapeño pepper, seeded and diced
2 avocados
2 limes, juiced
1/2 cup plain Greek yogurt
1/2 cup red onion, finely chopped
12 small corn tortillas
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon paprika
2 tablespoons extra virgin olive oil
1 teaspoon salt


Preheat oven to 450°F (230°C).
In a bowl, mix the minced garlic, chili powder, cumin, paprika, and 1 tablespoon olive oil. Add the cauliflower florets and toss to coat evenly.
Spread the cauliflower on a baking sheet and roast for 20 minutes, until golden and tender.
While the cauliflower is roasting, prepare the avocado-lime sauce by blending the avocados, half of the minced cilantro, Greek yogurt, juice of 1 lime, and 1/2 teaspoon salt until smooth.
In a separate bowl, combine the black beans, diced jalapeño, red onion, juice of the remaining lime, and the rest of the cilantro. Mix well.
Warm the tortillas in a skillet or microwave.
To assemble the tacos, place a spoonful of the black bean mixture on each tortilla, top with roasted cauliflower, and drizzle with the avocado-lime sauce.
