Spicy Peanut Udon Noodles recipe

This dish is a twist on classic Sichuan noodles. It's full of flavor with a spicy kick from fresh chili and a crunch from roasted peanuts. Udon noodles make it extra hearty. It's a yummy, warm meal that's perfect for dinner.

Ingredients

1 tsp ground Sichuan peppercorns
4 cloves of garlic
25 g fresh ginger
3 Tbsp light soy sauce
1 Tbsp sesame oil
1 Tbsp honey
1 large red chili
100 g roasted peanuts
400 g udon noodles
2 Tbsp vegetable oil
2 green onions, sliced for garnish
1 Tbsp sesame seeds for garnish

Method

Cook the udon noodles in boiling water for about 8 minutes or according to the package instructions, then drain and set aside.

While the noodles are cooking, deseed and thinly slice the red chili, and set aside.

In a small bowl, mix the ground Sichuan peppercorns, minced garlic, grated ginger, light soy sauce, sesame oil, and honey to create the sauce.

In a pan, heat the vegetable oil over medium heat and stir-fry the sliced red chili for about 1 minute.

Add the sauce mixture to the pan and cook for another 2 minutes, stirring frequently.

Toss the cooked noodles in the pan with the sauce and chili, ensuring they are well coated.

Roughly chop the roasted peanuts and sprinkle them over the noodles.

Garnish with sliced green onions and sesame seeds.

Serve hot and enjoy your spicy peanut udon noodles.
