Spicy Peanut Cauliflower & Chickpea Lettuce Wraps Recipe

These lettuce wraps are filled with roasted cauliflower and chickpeas, all coated in a spicy peanut sauce. Topped with peanuts and a creamy sauce, they're wrapped in crisp lettuce leaves. It's a fun and tasty meal!

Ingredients

1 head butter lettuce
1 medium head cauliflower
1 cup chickpeas, drained and rinsed
2 tablespoons olive oil
1/4 teaspoon salt
1/4 cup peanuts, roughly chopped
2 tablespoons peanut butter
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon water
1 tablespoon lime juice
1 teaspoon chili garlic sauce
1/2 teaspoon grated ginger
1 clove garlic, minced
1/4 cup Greek yogurt
1 teaspoon sriracha sauce

Method

Preheat oven to 450°F (230°C).

Wash and dry the fresh produce.

Separate cauliflower into bite-sized florets and transfer to a large baking sheet.

Add chickpeas to the baking sheet with the cauliflower.

Drizzle cauliflower and chickpeas with olive oil and season with salt; toss to coat and spread out in an even layer.

Roast in the oven until cauliflower is tender and chickpeas are slightly crispy, about 20 minutes, stirring halfway through.

In a small bowl, whisk together peanut butter, soy sauce, honey, water, lime juice, chili garlic sauce, grated ginger, and minced garlic to create the spicy peanut sauce.

In another small bowl, mix Greek yogurt and sriracha sauce to make a creamy sriracha sauce.

Remove the roasted cauliflower and chickpeas from the oven and drizzle with the spicy peanut sauce; stir to combine.

Separate the lettuce into leaves and double them up to make the wraps.

Fill each lettuce wrap with the cauliflower and chickpea mixture.

Top with chopped peanuts and a drizzle of creamy sriracha sauce.
