Spicy Peanut Butter Udon with Crispy Tofu recipe

This dish is a twist on noodles with a spicy peanut sauce and crispy tofu. We cook udon noodles and mix them with a homemade sauce. Then we top it with tofu that's been fried until it's super crunchy. It's a yummy meal that's a little bit spicy and very tasty!

Ingredients

400 g Udon Noodles
200 g Firm Tofu
4 Tbsp Cornstarch
1 Tsp Salt
1 Tsp Paprika
4 Tbsp Peanut Butter
2 Tbsp Hoisin Sauce
1 Tbsp Light Soy Sauce
1 Tbsp Dark Soy Sauce
2 Tbsp Vegetable Oil
1 Tbsp Sesame Oil
4 Cloves of Garlic
1 Bunch of Green Onions
1 Red Bell Pepper
2 Tbsp Sriracha Sauce
100 g Snow Peas
1 Tbsp Rice Vinegar

Method

Cook the udon noodles according to the package instructions, then rinse under cold water and set aside.

Finely chop the garlic and green onions. Slice the red bell pepper and snow peas into thin strips.

Cut the tofu into 1-inch cubes and pat dry with paper towels.

In a bowl, mix the cornstarch, salt, and paprika. Toss the tofu cubes in the mixture until they are fully coated.

Heat the vegetable oil in a pan over medium heat. Add the tofu and fry until all sides are golden and crispy, about 5 minutes. Remove the tofu and set it on a paper towel to drain.

In the same pan, add the sesame oil and sauté the garlic, green onions, and red bell pepper until they start to soften, about 2 minutes.

Add the snow peas to the pan and stir-fry for another minute.

Prepare the sauce by whisking together the peanut butter, hoisin sauce, light soy sauce, dark soy sauce, sriracha sauce, and rice vinegar in a bowl.

Add the cooked udon noodles to the pan with the vegetables, pour the sauce over the noodles, and toss everything together until the noodles are well coated with the sauce.

Serve the noodles in bowls and top with the crispy tofu. Enjoy your spicy peanut butter udon with a crunch!
