This is a yummy noodle dish with a spicy kick. It has soba noodles mixed with a creamy peanut butter sauce. There's also spinach for a green touch and crunchy peanuts on top. It's easy to make and tastes great!

Ingredients

2 Tbsp peanut butter

1 Tbsp soy sauce

1 Tbsp maple syrup

1 Tbsp sriracha sauce

1 Tbsp water

200g soba noodles

1 cup baby spinach

1 Tbsp chopped peanuts

1 Tsp sesame oil

Method

In a small bowl, whisk together the peanut butter, soy sauce, maple syrup, sriracha sauce, and water until smooth to make the sauce.

Cook the soba noodles according to the package instructions, usually boiling for about 4 minutes, then drain and rinse under cold water to stop the cooking process.

In a pan, heat the sesame oil over medium heat. Add the baby spinach and sauté until wilted, about 1-2 minutes.

Toss the cooked soba noodles with the spinach and the peanut sauce until everything is well coated.

Divide the noodles between two bowls, sprinkle with chopped peanuts, and serve immediately.
