Spicy Mango BBQ Jackfruit Tacos recipe

This recipe turns jackfruit into a delicious taco filling with a sweet and spicy mango BBQ twist. It's fun to make and eat! You'll cook jackfruit with spices and mango, then put it in tacos with toppings.

Ingredients

1 ripe Mango, peeled and diced (about 1 cup)
1/2 cup BBQ Sauce
1 Tbsp Apple Cider Vinegar
1 Tbsp Soy Sauce
1 Tbsp Olive Oil
1 Tsp Smoked Paprika
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
2 cans Jackfruit in brine (20 oz each, drained and rinsed)
1/2 cup Water
8 Small Corn Tortillas
1 Avocado, sliced
1/4 Red Cabbage, shredded (about 1 cup)
1/4 cup Fresh Cilantro, chopped
1 Lime, cut into wedges

In a blender, combine the diced mango, BBQ sauce, apple cider vinegar, and soy sauce. Blend until smooth to create the mango BBQ sauce.

Heat the olive oil in a large pan over medium heat. Add the smoked paprika, garlic powder, and onion powder, and cook for 1 minute until fragrant.

Add the drained and rinsed jackfruit to the pan. Use a fork or potato masher to break it apart until it resembles pulled pork.

Pour the mango BBQ sauce and water over the jackfruit. Stir well to combine.

Bring the mixture to a simmer, reduce the heat to low, and cook for 20 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened.

While the jackfruit is cooking, warm the corn tortillas in a dry skillet or in the oven until they are soft and pliable.

To assemble the tacos, place a scoop of the spicy mango BBQ jackfruit on each tortilla.

Top with sliced avocado, shredded red cabbage, and chopped cilantro.

Serve with lime wedges to squeeze over the tacos before eating.
