Spicy Honey-Lime Chicken Lettuce Cups recipe

This recipe is for delicious chicken wrapped in fresh lettuce leaves. The chicken is cooked with honey and lime for a sweet and tangy taste. It's served with crunchy carrot sticks instead of celery for a colorful twist.

Ingredients

1.5 lb boneless skinless chicken thighs
1 head butter (Boston) lettuce
2 medium carrots
2 avocados
1 pint cherry tomatoes
1 small bunch green onions (scallions)
1/4 cup honey
2 limes
1/2 tsp black pepper
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
2 tbsp olive oil

Method

Wash and dry all fresh produce.

In a small bowl, create a spice mix by combining black pepper, chili powder, garlic powder, onion powder, and salt.

Cut the chicken thighs into 1/4-inch strips and place them in a medium bowl. Add half of the spice mix and the juice of 1 lime to the chicken, mixing thoroughly with your hands.

Heat olive oil in a skillet over medium heat. Add the chicken and cook, stirring occasionally, until golden brown and cooked through, about 7 to 10 minutes.

While the chicken cooks, peel and cut the carrots into sticks, halve the cherry tomatoes, and slice the green onions into 1/4-inch pieces.

Halve the avocados, remove the pits, and thinly slice the flesh crosswise. Scoop out the slices and set aside.

Separate the lettuce leaves, rinse, and pat dry.

In a small bowl, whisk together the honey, the juice of the remaining lime, and the other half of the spice mix to create a honey-lime glaze.

Once the chicken is cooked, pour the honey-lime glaze over the chicken in the skillet, tossing to coat evenly.

To serve, spoon the glazed chicken into the lettuce leaves, top with cherry tomatoes, green onions, and avocado slices. Serve with carrot sticks on the side.
